

I cannot believe it is already September. I will say though…it’s felt like a long summer, probably because it has been a million degrees here since April. But, I digress.
One of my favorite things to do in the summer is go to the farmer’s market. Our local farmer’s market had AMAZING peaches this year. There’s nothing more refreshing than a sweet, juicy peach. So, as a way to celebrate the end of summer, I thought I would make this easy, healthy and yummy peach pie overnight oats recipe!


Overnight oats are so convenient. There are many different ways to enjoy them, it takes about 5 minutes to prep and you can eat them right out of the fridge the next morning! Possibly my favorite thing about overnight oats is the fact that they are kid approved, so I don’t have to make Hadleigh a separate breakfast!
Brendan and Hadleigh prefer them warm, but I’m a fan of eating them cold, especially in the summer! If you prefer your oats warm too, just pop them in the microwave!

I used the farmer’s market peaches a few other times this summer to make slow cooker peach cobbler. Holy moly…SO good, but also SO fattening. I wanted a way to indulge in the taste of a peach pie or cobbler without the guilt, cue in: peach pie overnight oats!
Side note – if you don’t have fresh peaches from the market, don’t fret! Use canned peaches instead or grab some from your grocery store.

Peach Pie Overnight Oats
Notes
If you use vanilla Greek yogurt, you can omit the vanilla extract. I accidentally used plain yogurt in this recipe and added the vanilla and it turned out delicious!
Ingredients
- 1 peach, diced
- 1 cup old fashioned oats
- 1 cup almond milk (or preferred milk)
- 1 tbs honey
- 1 tbs chia seeds
- 1/2 cup Greek yogurt (vanilla or plain)
- 1 tsp vanilla extract
- 1 tbs cinnamon
Instructions
- Cut up peach, place half into bottom of jar
- Mix all of the remaining ingredients together and place into jar
- Let sit in refrigerator for 7-8 hours (or until desired consistency)
- Top with remaining peaches when ready to eat
